{Better than Starbucks} Lemon Scones

Scones, y'all. How did I not know how easy they are to make? I am obsessed. I gave some to my girlfriend over the weekend, and her husband said, "Whoa, those look like Starbucks scones." I know. I know.

Seriously, it is so easy to make a flaky, delicious scone. I made these lemon scones a few weeks ago for a baby shower and then I whipped up some more a few days later and but traded out the lemon for cinnamon. Amazing either way!

What you need:
2 cups all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold butter
1/2 cup buttermilk
1-1/2 teaspoons grated lemon peel
Juice from 1/2 a lemon ( or 1 tsp. lemon juice)
Additional sugar

What you do:
1. In a medium bowl, combine flour, sugar, baking powder, baking soda and salt. 

2. Cut in butter until mixture resembles fine crumbs. I use my hands to mix the butter in. 

3. Add buttermilk and lemon peel and lemon juice, stirring just until mixed.

4. Turn onto a floured surface; knead gently six times. Shape into a ball. {Shortcut: I just do this process in the bowl to save time.}

5. On a greased baking sheet, pat dough into a circle about 1/2 in thick and 8-1/2 in. in diameter. Using a sharp knife, cut wedges in the dough, being careful not to cut all the way through. Sprinkle with sugar. 

6. Bake at 350° for 20-25 minutes or until edges are lightly browned. Makes 10-12 scones.

Variation: For cinnamon scones, omit the lemon and add about 1/2 tsp. of cinnamon to the flour mixture. Sprinkle top with a coat of cinnamon and sugar as well.
